Ingredients:
1 Cup all-purpose flour
2 eggs
½ cup milk
½ cup water
¼ teaspoon salt
3 tablespoons butter
Method:
Sift the flour into a large mixing bowl and add the salt. Make a hole in the centre of the pile and break the eggs into it. Start mixing the eggs into the flour with a small whisk. Gradually incorporate all the flour and then start to slowly add the water and milk while still mixing. Continue to whisk until all the milk and water have been added and the mixture is smooth.
When you are ready to make the crépes add 2 tablespoons of melted butter to the mixture and whisk well again.
Use a 7 inch non stick frying pan. Heat it on the stove top and then add a small bit of butter, making sure it covers all the bottom and then heat it until it is very hot.
Now add 2 tablespoons of the mixture to the frying pan and swirl it around until it covers all of the bottom. With a spatula loosen it at the sides and when it begins to turn brown flip it with a fish slice and continue to cook until it is brown on both sides and then serve.
Add toppings as you wish. Lemon juice, sugar maple syrup are some suggestions.
